To press verjus — literally “green juice” — we harvest the grapes at a stage when their vibrant citrus-like acidity and distinctive fruit character have already developed, but the berries still contain very little sugar and juice. The result is something like a “lemon juice” with the aroma of fresh must and the flavour of grapes. The difference is that the acidity of verjus is more refined, complex and flavourful than that of lemon juice.
Naturally, verjus does not undergo alcoholic fermentation, so it contains no alcohol, while the “lemonade” made from it is exceptionally low in sugar and calories. It is a perfect addition to a healthy lifestyle. In the summer heat or during exercise, it makes an excellent hydrating drink. Add a small pinch of salt and it becomes a natural isotonic drink.
The simplest — and perhaps the greatest — verjus recipe:
Add 1–2 tablespoons of verjus to a glass (300 ml) of sparkling water, according to taste. That’s it!
And beyond drinks, you can use verjus pretty much anywhere you would normally use lemon juice.
