Wines by Soils

From the very beginning, ST.DONAT has been known for a winemaking philosophy built around expressing soils and individual vineyard sites. The estate cultivates 12 hectares organically in Csopak and Tihany.

During tastings, guests can learn about the geology of the Balaton region and explore wines grown on marl, red sandstone, and basalt tuff. You will also discover the historical background of key vineyard sites, including the story of the estate’s namesake, St. Donatus—the Roman patron saint of vineyards—and one of Hungary’s earliest vineyard records, the Guden charter of 1079.

As part of the tasting experience, the cellar beneath the terrace can also be visited. Built using medieval techniques from 200-year-old bricks, the aging hall and its more than 4-meter-high Gothic vaults stretching above the barrels represent one of the finest Balaton works of master cellar builder Ferenc Heimann.

Balaton Olives

Climate change is gradually but steadily reshaping the Balaton region. Measurements show that the average temperatures in Csopak over the past 15 years have matched those of Istria in the 1980s, and forecasts suggest this trend will only intensify in the coming years.

At the same time, olive trees have appeared on the rocky, south-facing slopes of the northern shore, and today nearly 10 hectares of scattered plantations can be found from Csopak to Szent György Hill.

In addition to establishing experimental olive groves around the estate—featuring both young and mature trees—we to embrace and present the emerging story of Balaton olive cultivation. Tastings highlight olive oils connected to the Balaton story, alongside the very first Balaton olive oil. Guests can learn about the plantations, the varieties, and the philosophy behind the key decisions.
